		<description>Interesting you say that because it is exactly how I was expecting it to be. Maybe it depends on the part of the eel that is used? Or when it is caught? There is a bunch of stuff about it on the Ummera site. 

Also, the site did answer my question about over-fishing. It turns out that eels are suffering from this like most fish so maybe it is a good thing (for them) they are not too popular here after all.</description>

		<description>I won a smoked eel once. I&#039;m very fond of smoked fish, so I was pleased as punch. Sadly, I found the texture gelatinous and slightly ill making.

		<description>My first taste of smoked eel was fantastic--part of a tasting plate at Ballymaloe. After that I couldn&#039;t get enough of it.
I&#039;d kind of forgotton about it since then, but I was just watching Hugh etc. in a River Cottage episode where he caught live eels and ate them in a classic Loire dish.
Sadly the Great Pacific NW of the good old USA has plenty of water, salt and fresh, but not an eel worth eating. . . .Thank God for Ummera.</description>
